2 ½ cups cooked quinoa
2 large carrots, diced
2 stalks of celery, diced
1 cup of diced mushrooms
1 head of broccoli broken into florets
1 red capsicum, diced
1 large bunch of kale, shredded
4 tbsp tamari/soy
2 tbsp mirin
½ tsp chilli powder
2 tsp garlic powder
- Heat 1/4 cup of water in a large fry pan
- Add the vegetables (except kale) and cook on medium heat until they start to soften
- Add in the kale and cook until the kale starts to wilt
- Add the quinoa, tamari, mirin, chilli powder and garlic powder
- Cook until heated through and serve!
