Cream of Broccoli Soup

Sam and I are determined to stay eating healthy. And I’m determined to make sure I eat more greens, like, all the time! So that lead to this recipe. This soup got me this text message: “My God, this soup is divine!” today.

Cream of Broccoli Soup

1 red onion, chopped roughly
4 garlic cloves, chopped roughly
6 cups of fresh broccoli, chopped roughly into florets
7 1/2 cups of chicken (vegan) or vegetable stock
4 stalks of kale, washed and chopped roughly
400g can of mixed beans
1/2 of a 400g can of chickpeas
400ml can of coconut milk
3/4 cup of oats
salt and pepper to season
parsley to garnish

  1. In a large, heavy bottomed saucepan, sauté the onion and garlic in 1/4 cups of water until the onion is soft
  2. Add in the broccoli, stock and kale
  3. Bring the soup mixture to the boil

  4. Add in the beans and chickpeas and simmer until the broccoli is just soft (not soggy!)

  5. Stir in the coconut milk

  6. Pour the soup into a blender, add the oats and blend until very smooth
  7. Season with salt and pepper, add some chopped parsley and serve!
